Flavors: The plain variety of this cheese has a sweet milky flavor. Included are Wasabi, Tuscan Herb (rosemary, garlic, oregano, sage), Roasted Chile, Garlic & Chive.

Uses:
As a snack on crackers, spread on sandwiches, mixed into mashed potatoes instead of milk and butter, dropped onto grilled fish, mixed into pasta, stuffed into chicken breasts or pork chops and baked or grilled. Pastry chefs use the plain in cheesecakes, wedding cakes, strudel. Also used by restaurants in ravioli.

Make:
Gently pasteurized, non-homogenized, high-quality cow's milk is cultured, renneted with small amounts vegetarian rennet and set overnight. The curd is not cut; it is hand-ladled into cheesecloth saddlebags that allow the cheese to drain over the vat. The cheese is salted and herbed after draining.
