Recipe of the Month

Blue Cheese Crostini
Serves 24

4 oz. Bingham Hill Rustic Blue
4 oz. butter
1/2 lemon
1 small garlic, chopped
1 or 2 plum tomatoes, peeled and diced
1/2 lb. mushrooms
4 Tbsp. chopped parsley
pepper and salt to taste
24 toasted bread slices, cut in four or crostini

Chop the mushrooms into small pieces, saute in butter and sprinkle with lemon juice. Mix 4 ounces butter and cheese until blended. Add the tomatoes, mushrooms, garlic, parsley, salt and pepper. Spread the mixture on each piece of toast or crostini. May be broiled until the cheese starts to melt.
