About the owners

Besides being a shop keeper, I am a yoga teacher. Hugh and I met eleven years ago when I began working at his first restaurant, Greens in Denver. The restaurant eventually moved to south Pearl St. where it's name changed to Hugh's New American Bistro. After many years in the restaurant business we decided to slow down so we opened St. Killian's Cheese Shop. We're enjoying our third year at the shop and loving the extra time we have to do yoga and explore rivers in our canoe.
About the shop of the month.
We love our shop! It's located in the North Highlands neighborhood in Denver. We have the greatest wine shop in town next door to us, Mondo Vino, and the best bakery down the road from us, Denver Bread Company. We usually have 50-60 cheeses in our cases from the great cheese producing regions of the world. We love to support local artisan cheese makers and appreciate that you are so close to us! Hugh loves to bring in hard to find specialty foods. In our cases, right now, we have Neiman Ranch guanciale (pork jowels), Spanish chorizo, Spanish mojama (air dried tuna), Spanish Jamon Serrano, Morcilla (blood sausage) from Spain, bacalao (salt cod), and many more delicious, not so easy to find foods.
Recipes and serving suggestions.
I love to recommend Bingham Hill Blue with port and dried figs and apricots for after dinner. Our customers love it on a juicy burger. Mostly we enjoy your cheeses on good crusty bread with an appropriate wine. I can't tell you how many tumbleweeds we enjoyed with crisp white wine this past summer.
